VS Project Reference

I have created a project in visual studio 2005 that references the
excel com. What do I need to do when I deploy the app? I'm sure it
is more than just copying over the executable.

Why wouldn't you be able to copy the executable?

The fact it refences excel shouldn't be a problem assuming
excel is installed on the target PC.
