variable for current users' my documents folders ?

To see others :
Start > Run > Type cmd > Type set
They are variables, just add % to beginning and end

Actually, its %USERPROFILE%\My Documents. For others open a command prompt
and type SET. Others that won't be listed there are:

Favorites
SendTo
