Can I use crossover cables to transfer files from one computer to another
without going through a network?

Three points:

1. First, you need *one* crossover cable, not multiple ones.

2. When you use a crossover cable, you establish what *is* a network. It's
no different than if you had gone through a hub or router, just cheaper (but
works only for two computers, not more).

3. Yes, you can transfer files over the network you establish with a
crossover cable. It's very easy.
