Using British English Dictionary

I am working on a book that must use a British (UK) English dictionary. All
of my other writing requires American English.

How can I force Word to use a British English dictionary for that one
document and American English for all others? The default should be American
English.

Ctrl+A to select all the text in the document and set the language for it.
You might want to redefine the Normal style for that single document to have
that language formatting also.
