User Defined Fields in "this item" are going to "this folders"

I'm using Outlook 2003. I used User-Defined fields for Contacts to store
miscellaneous information for that contact (like bank account).

I used to create "user defined fields in this item", that means that this
field is visible only in this contact and not in any other contact. This
worked fine in Outlook 2000.

But when I migrated to Outlook 2003, whenever I create "user defined fields
in this item", it gets created as "user defined fields in this folder". This
means that that particular field is visible in all the contacts in that
contact folder. This is not what I want.

How can I avoid this?

This is normal behavior. Creating a new field in an item also defines it in
the item's parent folder. You can remove it on the All Fields tab, under
User-Defined Fields in <Folder>.

You might want to use a custom form that contains your user-defined field in
the form. That way you won't need to add it to each item and keep deleting
it from the folder.
