Updating Office after published

I am planning to publish Office 2003 to around 50 workstations shortly. I
am wondering how things work once all workstations have the Office 2003
published, and I walk over and install a patch or SP on a workstation. Will
the Group Policy see a change and revert back to the pre-patch/SP status?

In this case, usally you use an administrative installation point.
Apply the Service Pack (.msp) to this point and roll out the
software again. All Clients will be re-installed with the updated office.

If you are using WSUS, then the WU Client will update the system.
The GPO will not revert the system back.
