I recently left our computer on for 2 days while we were away, in order to
send a scheduled fax.

When we got back there was a message that windows had been updated and the
computer had rebooted although I had not requested this.

Is this normal for windows xp (home edition)? Windows automatic update is
on. I had thought that the automatic updates would only happen when shutting
down.

The rebooting caused the fax program to exit and the fax didn't get sent.

IIRC, there is a prompt something like
"Do you want to restart now or later"

But if this is not answered, then after a certain amount of time, the PC
*will* restart

Yeah, that is a bummer. I would be better if the default to not answering
the prompt were to do nothing

If that's a problem, set automatic updates to notify only then that way you
choose when to download and install.

You can set the Update as follow:
Click Start >> Control Panel >> Security Center >> Automatic Updates.
On the Automatic Updates window check this Radio Button:

(*)Notify me but DON'T automatically download or Install the updates.
Click [OK]. Next time a shield will pop up and alert you that there is/are
some updates available to your machine do you want to download them!
If you said yes then the download will start then it will stay unitil you
select to install them or install them on Shutdown procedure.
