Hi, i have two tuners installed but cannot watch a different channel if i am
recording! is there a setting i need to go into to tell the system it has two
tuners installed? when i set it up i ticked both cards so the system can see
then?

It depends on what make/model the two tuners are and what the sauces of
programs to them is.
With the exception of ATSC tuners in the US both tuners have to be of the
same type and configured the same so that they can use the same EPG with
Media Center.

so the Tuners need to be the same brand? the both have there own antenna
input and if i set them up one at the time they both pick up all the
channells! but if i try to select a different channel from the one i am
recording media centre asks me if i want to stop recording so i can watch the
other channel! it is like it does not know there are two devices it can use!

No they do not have to be the same brand they have to be the same type.
For example you can an NTSC or PAL tuner from Hauppauge and another one from
ATI,
Then as long as they are both using an antenna, or both using a cable, or
both using and S-Video input then they both have will have the same EPG and
can both work at the same time.
If you are recording one channel and then start watching and then recording
another channel then both tuners are in use so you can not change the
channel you are watching without stopping one of the two recordings.
