If we have pcs that are running Win2000 and no one is logged on ... what
type of damage does it do to the operating system to shut off the power
every day?

They turn the pcs back on, but not log on ... then shut them down again at
night with the power strip ... does it do damage to the software or not?

It can potentially cause problems. Think about it. If the operating system
happens to have a file open writing a setting or something of that nature
and you kill the power then you stand the risk of corrupting the file. This
is not an automatic and for the most part windows can and will recover from
a sudden lose of power however you still stand the risk that something was
happening.

I agree with Byran and add that yes indeed the OS does have files in use
even before login and yes it will cause errors on the drive. Every
single time I have seen a Win2K machine powered off that way and running
chkdsk there at least two index entry errors fixed, sometimes more and
other errors.

So no, it's not a good idea to power them off that way. Educate the users.
