Tracking teh cause of a stutter

I have a Windows XP Professional PC that at random times freezes for a second
or two twice in quick succession. This is repeated a few minutes later. While
frozen the disk looks like it's being accessed a lot.

Is there a process or task tracking tool to go back and see what was going on?

http://systeminternals.com has a number of utilities for that. PView is included in the Visual Studio.
