Using Vista Enterprise 64 (although I don't think this matters for this
question).

Simple question - when using the file explorer, looking at a directory
with image files (.jpg, .gif, etc), how can I set the View such that it
displays thumbnails of each file?

I swear I have looked and looked and cannot find this option.

Control Panel (Classic View) > Folder Options > View tab. Un-check "Always
show icons, never thumbnails" (Apply, OK).
