Three drives in RAID 0?

Using the nForce4 Ultra controller, i've got two drives setup in RAID as is,
but do i need another two or can i just add one?

Like a three (3) drive RAID 0?

Don't know about your controller though I can't imagine it being too
different from common ones like Adaptec.

Stripe sets can be formed with 2 or more drives, odd or even numbers are
fine.
