the 'All Mail Fields' 'From' field

When I open a contact in Outlook 2007 and click on 'All Fields' in the
'Show' group, and then select 'All Mail Fields' in the 'select from:'
drop down, the 'From' field does not hold the proper value. I do not see
any way to change or modify this value. Can anyone help?

In general, mail fields don't apply to contacts. The From field shows who
created the contact. If you're trying to set the email address for a contact,
use the email fields on the General page. If you want to set other built-in
fields using the All Fields page, stick to the All Contact Fields list.

Thanks Sue - I guess I just wanted things to be tidy. I created the
contact(s) some time age and have since changed my provider and thus my
email address. The 'From' field in the 'All Mail Fields' group shows the old
email and I wanted to update it to show my correct address.

There is a consequence not having this field correct in Outlook 2007. When you try to forward the contact by .vcf (i.e. right click>Send Full Contact>In Internet Format (vCard)) it creates an email message with vCard attachment but with the "from field" filled in using the "from field" as shown in the contact mail fields (i.e. it will show whatever address is in the contacts "from field", not the address of the default send account)
