How do I lock a single text field when creating my own form?

You can't. The minimum you can lock is a section (the part of a document
between section breaks, or the whole document if there are no section
breaks).

And just to clarify what seems to be a bit fuzzy in your wording: You don't
lock a field, you lock the text that contains the field. When you do that,
you can enter text in the field but you can't edit anything else.
