You can change the default color of text in the message body, but to my
knowledge, not the color of text in the subject line, as it's a field of the
message form that does not allow formatting.

With that said, and without testing it, you might be able to redesign the
form that Outlook uses (Tools > Forms > Design a Form) and select the
subject field, access its properties, and change the default format there.
 
Thank you. That is what I came up with also, but I thought that I was
overlooking something.
