Is there a way to show categories for Tasks in the Personal Folders view?
When I click on tasks, I can see the task and category. It would be great to
see that on my personal folders view too.

Either choose a view that contains them (like "Detailed List" or "Active
Tasks" or "By Category") or add it to the "Simple List" view you're using by
using Field Chooser to add the Categories column to the header line.
 
I'm sorry, I don't think I explained my question very well. I can get the
fields and view the way I want on the Task screen, but when I go to Personal
Folders where I see email, calendar events and tasks, I loose the category.

The Outlook Today screen can't display categories.
