I just put XP on my computer and with 98 I always did ctrl/alt/del to stop
all running programs except systray and explorer. But I'm confused with
what to do with XP. I get the task manager with lots of stuff on it. Which
ones, if any should I stop before playing games?

I wouldn't do that, Don. Windows XP is from the NT line of operating
systems, and unlike Win9x where you needed to pare down what was running.
If it is a program that is launching you don't wanted start, go to Start/Run
and type in "msconfig" without the quotes and remove it from the Startup tab
listing.
