Table / Figure Caption and tying to Header 1

I am using headers to label my table/figures. Unfortunately, the header uses
Roman numerals, and when I select "Include Chapter Number" it places a Roman
"I" instead of a 1. I get "Table I-1" instead of the desired "Table 1-1". I
tried adding this to the field codes:
{STYLEREF 1 \s \* ARABIC}-{SEQ Table \* ARABIC \s 1}
but it will not change to arabic for the chapter number. Does anyone have
any suggestions on how to make this work? I'm using MS Word 2003.

As far as I know, you cannot use numeric picture switches to change what is
displayed by a STYLEREF field.
 
So, is there a solution? Seems kind of odd that a feature like this should
be left out.
