Store emails on disc

I work for a contractor and each of our project managers and engineers create
subfolders in their inbox to log correspondance between the various people
involved in each project. Sometimes this involves large attachments
(Pictures, Scanned Plans,...etc). When we close a job we pull all of our
files off of our network server and put it on a disc to free space on the
server. I would like to be able to include these email folders on that disc
so people can access them later. Any ideas?

Create a new PST, copy those folders to that PST, close the PST in Outlook,
then close Outlook. Copy the PST to the location where you want to save the
data.
