how can i take programs of the startmenu/s without deleting them ??
 
right click the start menu click on properties click on the customize tab
then read the instructions and put what ever you want on the start menu
 
the start menu only has short cuts on it so deleting them will not delete
your programs

A word of clarification here: Start | Programs *normally* has
only shortcuts on it, but it is possible to put actual programs
and data files on it.

I'm certainly not recommending that anyone put anything but a
shortcut there, but anyone who has customized Start | Programs
should first look to be sure it's just a shortcut he's deleting.
