In XP, I had Favorites on my Start Menu; Is this possible with Vista, and how
do I do it. I also wonder if there is a Power Toys for Vista, or an easy way
to not show recently opened documents in the start menu? Thx

Run "gpedit.msc"
This is the Local Group Policy Editor.
In User Configuration you will find Administrative Templates.
And there you will find "Start Menu and Taskbar" settings.
There is a setting "Remove Recent Items menu from Start Menu"

Your Favorites is now accessed from the logged in users name in the top
right of the start menu.

Right-click the Start button, left-click click Properties, click
Customise..., tick Favorites menu.

Right-click the Start button, left-click click Properties, click
Customise..., tick Favorites menu.

....and whilst you're in that panel there is a checkbox to disable
display of recently opened docs (*don't* click 'customize' to see
this).

both of theses items are options on the Properties of the START button.
right click on start, select Properties and then customize to your hearts content.

It's done exactly the same way as it was in WinXP: Right-click the
Task Bar > Start Menu > Customize....
