How do I hide my recently viewed documents from showing up on the start
menu?

Right click on a vacant part of the taskbar (the bit between the start
button and the clock) From the drop down menu select properties. in the
properties window Click the Start menu tab and then click the Customize
button. In the customize window clcik the advanced tab and look at the
bottom of the window. Remove the tick mark from the List my most recently
opened documents. Next click the Clear list button to clear the document
links that are already on the start menu. Click OK and then in the next
window click Apply then OK to exit.

I use the classic option and it doesn't have an option that I can see to
make it not show the receently viewed documents.

Tick the Start Menu just to complete the setup as stated by John Barnett.
Once you've complete the setup you can switch back to the Classic option.
