What is the formula to remove the dashes from social
security numbers?

Try something like

=SUBSTITUTE(A1,"-","")

Select the range of SS nubers and do a Edit >replace - with nothing.

And if the dashes are inserted because the number is formatted as
Format|Cells|Number tab|Special category|SSN, just format the cell as General.
