Slow RAID 1 performance on SATA - can I convert to RAID 0?

Set up:

AMD 64 3400+
2GB RAM
2 x WD SATA II 300GB Harddrives connected via a SATA RAID 1 config.
2 x SATA drives on seperate SATA and IDE channels.
Windows XP SP2 - all updates downloaded.


My HD performance has been gradually slowing down and I still have over
100GB free space. I do a lot of Photoshop work and have my scratch disk on a
separate SATA channel and another drive on a IDE channel as well as my
DVD's. Windows Defrag has been used on all drives with no benefit perceived.

How do I convert to RAID 0 without losing data?
Will this potentially improve performance?
