Can I shut off Word's highlighting (blue/uline) of http://... links
and force them to _not_ be live links to the default web browser. I
want them to be plain text. Can I do this in a document and/or for all
documents on a particular client ?
Ctrl+Shift+F9 will unlink them. Or, if you have the Remove Hyperlink item on
the shortcut (right-click) menu, you can use that.

Select Tools > Autocorrect Options from the Menu
Under both "AutoFormat" AND "Autoformat As You Type" tabs .
Uncheck "Internet and Network Paths with Hyperlinks"
