I have a Windows2000AD domain. I know there is a way to create a
"domain share" instead of user individual server shares, and I believe
this is done through the DFS, but I'm not quite sure how to set it up
and haven't been able to find it on Microsoft's site. I must be using
the wrong terminology. Does anyone have a link to a good explanation
of this?

Thanks in advance!

Dfs = Distributed File System. You are on the right track.

Go to Start > Help on your W2K server and enter Dfs = loads of info
