Setting up an OS/Apps partition and a Data partition

After browsing this wonderful site for well over two hours, as well as
reading over many of the posts about the pros and cons of setting up seperate
partitions on the same physical drive for Os/Apps and Userdata files (namely,
'Documents and Settings'), I have yet to find any sort of information on how
to actually DO this...
Maybe I'm just missing something very obvious (I have a habit of that some
times), please point me in the right direction if I am.
Half of me thinks that it might be as simple as copying and pasting
'Documents and Settings' from the main primary partition onto a blank logical
partition.
The other half is confused.

Any ideas out there?

Usually the second Drive/Partition is used for Data
To move My Documents, simply rt click on the Icon>Properties>Move
Certain Apps have an Option to locate specific data files at another
location
eg Office templates, Outlook

PS If the drive dies so do both partitions.

Hmm...I do not have an option to Move in the properties dialogue. Right
dragging My Documents does not work either. This is the part where the
second half of me gets confused.

What I am trying to do is get an basic image for one of my clients. Most of
their users use the same set of programs, all with the same setup. The
client does want the Documents and Settings of all users to be on the second
partition, leaving the apps and OS on the first.

Thanks in advance for any ideas y'all have.
