Just set up Outlook 2007 on XP and my sent to folder shows my name instead of
different names of the sent to people. Is this default setting? Wouldn't it
be better to see who I sent to and not my name in top line of all mails in
sent folder when open?

Has your name WHERE? If it is in a From column then, of course, it will
list you because you were the sender (i.e., the e-mail came FROM you).
Add the To column if you want to see to whom you addressed an e-mail.
Right-click in the column header row and select Field Chooser.

So, change the view to "Sent To" instead of "Messages".
