Sending plain text email with redemption

Ok, we have run into a few snags....

Using redemption with Outlook 2000 or above, we need to send a plain text
email.
This worked perfect when we were using Exchange 5.5.

However, when using exchange 2000 or 2003, odd things happen.....

When the sent message is opened by outlook, it is displayed as an RTF
formatted message. If you open the message using IMAP4, the body is
returned in HTML format. (yes, lots of HTML markup in there, and comments
that the exchange server created it).

If I send the message to an SMTP server that is not Exchange, it retains
plain text format.

If I manually send a plain text message from Outlook, it remains plain text.

So here are the questions:

1. How does Outlook determine if a message is Plain Text, RTF, or HTML? I
have tried setting the PR_MSG_EDITOR_FORMAT property prior to sending, but
it seems to make no difference. Therefore, I deduce that Outlook is looking
at something else to determine the message format, but I cannot figure out
what.

2. Is there some setting on Exchange 2000 and 2003 that is causing this to
happen? As I said, it didn't happen with Exchange 5.5.

Any thoughts or assistance would be greatly appreciated.

In Exchange System Manager, go to the Protocols, select a protocol (IMAP4,
POP3, etc), RMB, select Properties, go to the "Message Format" tab.
