How do I set up my e-mail so that all outgoing messages automatically send a
cc: to myself?

Aren't they saved in Sent Folder, or are you wanting them cc to another
address?

Yes they are saved in the Sent Folder, but as a precaution, I would like to
have all outgoing e-mail cc: to myself to ensure it was delivered. I have had
occasional problems with my satellite ISP (only other option where I live is
dial-up), and I use my e-mail for business, so it's just an extra step to
make sure my e-mail did actually go through. Thanks.

That won't assure delivery. It may assure you that you can delivery to
yourself, but it won't ensure your intended recipient gets it.

You can set sent mail to have a read receipt so the receivers acknowledge.
However that can irritate some people, and anyway they aren't forced to
acknowledge.
