scanner as digital camera back

Hi,
I converted my canon lide30 to a digital back for my cambo wideframe camera, as in this project.
You can find some pictures I took here.
These are my questions:
- since, in the harsh and dark conditions i get realy good results in black, white and gray gradations, and in exellent daylight conditions i get really overexposured pictures, I was wondering if there were any good scanners where i could fiddle with the exposure.
- I worked with vuescan on vista and xsane on linux.I can fiddle with gamma, brigthness and contrast and curves. Those are fine to finetune afterwards, but i wonder if there's a way to fiddle with the actuale exposure.( i think that's about the same question as above)
- I allso see my cigarettes light up very hard. Could this be due to infared sensitivity?
-Light and dark stripes occur a lot, even when i take pictures in complete darkness. Even then i can see the outlines of my back frame!!Infrared?
- what is gamma??

I think i'll start from here and see where things lead me.
