Saving email as html and changing default setting

I normally save messages as an html document in previous Outlook. Upgraded
to Outlook 2007, and I just recently found that in Outlook 2007 my messages
supposedly "saved as" htmls, instead saved as (created) a file folder
containing metadata, etc. , and no copy of the message in the newly created
item.
1. Why is it doing that?

Now I am trying to save everything under the option "Text Only"
2. Is there any way to default this 'save as' option, rather than changing
it every few seconds when I save a message?

1. no idea why, other than its how it works. It's almost impossible to break the link with the folders. :(

2. No. There are tools you can use to save messages as plain text or html (but i'm not sure if the html includes the folders). See http://www.slipstick.com/addins/housekeeping.asp for tools. You can also use VBA.
