Saving Attachments as text files

I get incoming emails from the internet that attaches an html newsletter
to the message.
I need to save the attachment as a text file, extract an email address and
unsubscribe that address from a certain webpage.

Up until now I was able to do it in Exchange 2003. When I switched to Exchange
server 2007 I'm not able to do this anymore.
The saved attachment source looks like binary stuff.

Is there a way to save the attachment as a plain text. Is it Outlook or Exchnage
related configuration?
BTW, I'm using Outlook 2007.

When I open the attachment in Outlook (2007) the message shows fine and I
can view its source as plain text.
The problem is that I wrote a PowerShell script to process all messages.
I can't find a way to "open" the attachment,
view the source and regex for the email pattern.

I get about 50 mesages a day and manually processing them is not acceptable.
Any ideas?
