rules to delete junk mail

I want to run a rule to permanently delete mail in the junk folder (filtered
by outlook) according to my own rule.

How can I make the rule run only in the junk folder, after new junk arrived?
How can I say "except in the specified address book AND subfolder"?

Currently, I don't see any way to specify more than one address book or to
include subfolder of an address book.

outlook 2003
 
FYI rules run as emails arrive, not after they have been placed in a folder
(eg Junk Mail).

Have a look whether you can Archive (delete) the Junk mail folder's contents
daily. I don't have 2003 to check that sorry.
