Restoring contacts for a user from backup.

hello;
first time posting, anyway I am running outlook 2003 and have an exchange
server 2003 that handles all email. Anyway I ran program that utilizes my
outlook contacts and I accidently deleted all my contacts! Anyway I backup
regularly with Veritas backup for servers and I need to restore my user's
contacts and import them into outlook 2003 again.
What file do I restore from backup for my user?

I know outlook is a .pst file, but, isn't there a way of restoring a user's
mailbox from a backup? Exchange server 2003 handles all my users contacts,
calendar, tasks etc. I searched my exchange server for any .pst and it
comes up with just one.
any other suggestions? I do incremental backups of exchange once a day
using the backup that is provided with SBS 2003 and veritas backup at night
for all data.
