In my "styles and formatting" task pane, it is shown "Article I.
Heading 1", "Section 1.01 Heading 2", all the way up to "i. Heading 9"

How can I set it back to "Heading 1", "Heading 2" and "Heading 3" as
all new documents are?

You can control which styles are displayed from the bottom window in the
task pane. Sounds like yours is configured for 'all styles'.

I changed the task pane to "available formats" and other settings but
it is still "Article I. Heading 1".

I actually found out how to change the default setting to this "wierd
looking" format, but still don't know how to change it back.

1. New a document.
2. Open the "Styles and formatting" task pane. It shows "Heading 1".
3. Format-> Bullets and Numbering-> Outline Numbered -> (click the 1st
format in the 2nd row)
4. Now the task pane shows "Article I. Heading 1".
Now I don't know how to change it back.

An undo would work for this case. But I have another article that had
many other edits after I accidently changed the heading format and
therefore I can not undo.
