Reply format remains HTML

Outlook 2003 SP2 + Win XP Pro SP2 + Word

I've just replyed to an email where the reply format is not as expected. I
expected plain text.

I've set Tools > Options > Preferences > E-Mail Options > On Replys and
Forwards = Prefix each line with the original message using ">"

but word creates what looks like an HTML formatted reply with the vertical
bar on the left hand margin adjacent to the original message instead.

I prefer plain text. Any ideas what I have missed?
