When I send a Word document by e-mail to another party
when they open it any apostrophe is changed to an equal
sign. Why?

Most likely your document contains "curly quote" characters from the WP
Typographic Symbols font (especially if the doc was converted from
WordPerfect).

.

I am having the same issue with the apostrophe being replaced in some parts
of the document with the = sign. Some of the quotes also get replaced by A
for the open quote and @ for the close quote. However, on some PC's they show
up correct and on others they show up replaced. Is there a setting somewhere
that causes this to happen?

The answer has not changed. Your additional information merely confirms that
the original characters were inserted from WordPerfect's WP Typographic
Symbols font. This is not noticeable on a computer that has the font
installed, but on a computer that does not have the font, the default
paragraph font is substituted, with the results you are seeing.
