We have reinstalled SBS, MS Exchange and the whole box
and dice. We saved out all users mailboxes as pst files
and once the new Exchange was online, read them all back
in. Of course we forgot one!

Is there a way to recover the data out of an ost file?
The user name and exchange server names are different.

Secondly, we have a private calendar that should be a
public one. Can we move the calendar entries to another
user? (just use the pst mechanism again?)

In theory you wont be able to recover that ost without a third part utility
(do a google on ost2pst), but you may be able if you haven't already tried
to reconnect the ost to take a machine offline and then open Outlook in
offline with the ost, if it opens this way and to be honest its doubtful you
can then export it to a pst.
The quickest way to move the Calendar if its going into a Public Folder is
to change the view on the Calendar to say Categories and then use right
click drag/drop (right click drag/drop offers you a choice of Move or Copy).
