This is where - in most cases - one learns the value of backups. Periodic,
consistent and external backups.
If the files were being deleted and not infected/infested - maybe something
like undelete or recuva.
Since I have no idea what 'heavily corrupted' means now which AVs you are
using trials of (or why) - my advice is to refer to your backups - and if
you have no backups - computer lesson learned. When a computer file can be
backed up in so many ways so easily and even the entire computer backed up
in so many ways so easily - why wait until you are taught the lesson the
hard way - but many people do.
You can boot with something like the UBCD for Windows, Knoppix or even just
a plain BartPE CD and copy files off - but if they are infected/infested and
getting deleted when antivirus software scans them - you don't want them in
that state.
