In Outlook Express, the addresses were included in the outgoing mail, but
hidden when you read these messages. In Windows Mail, they are not
hidden, and you don't have the option of making them hidden.

If you'd like to send mail to more than one address, and keep the recipients
from seeing either the names or email addresses of any other recipients,
put their addresses on the Bcc: line. If you start a new message and don't
see this line, click on View, then All headers, in the new message window.
