Is there a (registry) setting I can modify for Win 2000/XP to increase the
number of documents that display on the Recent Documents List?

go to the registry key
HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Policies\Explorer
create (change) here dword value "MaxRecentDocs" and set it to equal the
number of documents to display in the recent documents list.
