How do I remove a word in order to lower my readability scores? Some programs
use double brakets or asterisk.

Arbitrarily removing words will certainly make your document lower the
readability.

You'll have to delete the word from the document, at least temporarily.
Microsoft Word includes everything in the selected passage when computing
the readability score.
