Can you change the label text on a public calender
residing on a e2k server like you can on a personal

Yes. The label customizations are stored in each folder, specific to that
folder.

I assume you mean the public folder but where\how do you
change it?

Label customization works exactly the same, regardless of the folder
location. If you want to modify the label text in an Exchange public folder,
you must be a folder owner.
