After I have signede some comuteres out of my domain, and rejoined them
again, all PST files i gone ??, they aint ussing romaning profiles, so they
should be on the local computer, nothings done on them, only on the new server

You didn't mention what operating system, but the .OST/.PST files are under
a hidden/system folder. You need to configure Explorer/search to show you
these types of files/folders.

Hint:
Documents and Settings\<USERID>\Application Data\Microsoft\Outlook
Documents and Settings\<USERID>\Local Settings\Application
Data\Microsoft\Outlook

sorry, computers is XP Pro SP3, and outlook 2003, the server is a SBS2003,
but the server acting as a file ond logon server, and do not have the
Exchangeserver installed!
Mail is running at a external hosting company, together with our website,
its at standard POP3 mail installation, on the pc's

I have tryed this, and made a search for the PST files, but negative results,
they are gone, but where?

C:\Documents and Settings\<USERID>\Local Settings\Application
Data\Microsoft\Outlook

Odd as unjoining/rejoing a computer to the domain usually doesn't cause
problems with existing user profiles stored on workstation. Any chance you
are staring at a new user profile? (e.g. Under c:\documents and settings\ do
you see another folder than might below to said person?)

Other than that, can't explain why the PST file(s) would go missing as I
have never seen it happen in regards to an unjoin/rejoin or
uninstall/reinstall of Office.
