Problem with text in email replies

Whenever I open an email in HTML format and want to reply to it, as soon as I
start typing, a space is added before and after where I am typing. For
example, if I wanted to edit a word in an email reply, it would look like
this:

hamberger - hamb u rger

How do I fix this? It is quite annoying having to edit a simple reply...

Do you edit in the original message text? If so, the Outlook editor will
insert your initials and a space around your new text.

If this is not the issue, please explain more detailed what you are
doing, what Outlook version and editor you are using.
 
Yes, I am trying to edit in the original message text. Is there a way to
avoid the initials and spaces around the edited text?

Also, I cannot click on the option to use MS Word 2003 as my email message
editor. How do I enable it? The box is greyed out...
