Previous Versions Granularity

I've been playing with Previous Versions in Vista Business. I'd like it to
save a version every time I save the file but the only time I can get a
version is when I manually create another Restore Point. I've seen screen
shots in reviews where they show a document with versions only minutes apart.
Am I missing a setting somewhere that allows me to save more versions?
 
The behavior you see is correct. Whatever screenshots you've seen must've
been done with multiple manual restore points taken minutes apart.
