Pivot Table field settings default

How can I make the default field setting to Sum in the Summarized By section?
 
The only way is by making sure that all the data in that field is numeric. If
you have text or empty cells in that field, you'll get count.

You may want to look at an addin that can help you (if you do it a lot):
