Adobe Reader 6.0 (free) has a "Save as Text..." item on their File menu. Is
there some reason why that won't work for you?

The best one I have found so far is in the xPDF package at
http://www.foolabs.com/xpdf/about.html. But you will still have a
fair amount of editing to do.

Adobe Reader 6.0 (free) has a "Save as Text..." item on their File menu. Is
there some reason why that won't work for you?

But can you save the whole document to text? Or just one page at a
time?

Also, I have Acrobat Reader 4.0. When you use the Copy text tool and
paste it into a text editor, it does some OCR for you and gets about
80% of the words right. But for a 500 page document that's still a
lot of editing to do.
