I have made an incorrect association sothat pdf filesare
not opened by the correct program, how can I undo this?

Right-click a PDF file, click OPEN WITH|CHOOSE PROGRAM. Checkmark the
"always use" box. Find the PDF viewer in the list, or browse to it, and
click on OK.

From Explorer > tools > Folder Options.... > File Types tab, find your
file type and use the change button to associate it with the correct
program.
